Creating "To Die For" Christmas Sweets

What is the one thing everyone enjoys at Christmas time? Arguably it could be sweets. There is nothing like a cookie, slice of cake or gum drop around the holidays. Here are some tips to make sure that those delectable morsels are just as tasty as their sugarplum visions.

Working with Chocolate
  • When you create a recipe that calls for chocolate, it is so easy to go wrong here. Instead of using the store-bought chocolate syrup, make your own. Buy the chocolate bricks and melt them yourself. Keep the heat under the saucepan low so that the chocolate doesn’t burn while it melts.
  • Dark chocolate is the new healthy chocolate for the 21st century. It is full of antioxidants and great taste. Use it for decorating cakes, cookies, breads and pies. Use some of that melted chocolate in a plastic bag to pipe out all sorts of cool designs onto wax paper. Once they cool, you can carefully place them on any dessert that you wish.
Butter
  • The rest of the year, this word gets sneer and jeers, but at Christmas, it is spot on. There is no substitute for using regular butter in your dessert recipes. Well, there is but it won’t give you the same taste or texture in your sweets. To compensate, eat a little less of each dessert, but by all means taste them all.
  • When working with margarine, part of it is water. It says that on the box. Water evaporates when baking and can partially dry out your recipes. Butter is also creamier when softened and whipped. It keeps your cakes, breads, cupcakes and cookies moist like they need to be. Unless the recipe calls for stiff butter, let it come to room temperature on the counter before using.
Fruit
  • Apple pies, peach cobblers and blueberry blintzes are all great during the holidays. Fruit can be expensive since most of your choices are out of season. If you can’t find fresh at a reasonable price, opt for frozen choices. It’s as close to fresh as you can get.
  • If you keep your fruit in the fridge to prolong freshness, make sure that you allow them to come to room temperature before using them in delicious dessert recipes. Fruit will juice better when warm. Scalding fruits with removable skins helps the skin to peel off easier so you don’t have to ruin the look of the fruit doing it the hard way.
Here are just a few tips for creating those desserts your family will love all holiday long. Christmas is the one time of year that they don’t want you to skimp on flavor or presentation.

How to Make a Gingerbread House for Christmas

Would you like to make a gingerbread house this Christmas? There are a few options. Either start from scratch, which may take more than a day to complete, or buy a Gingerbread House Kit which includes all of the items you’ll need to build this holiday favorite. Whatever the choice, your kids will have a lot of fun making it. This is a perfect way for them to use their imagination and creativity.

If baking is not your thing, simply go out and buy the kit so that your kids can spend more time decorating it. Putting the house together is pretty simple. Just follow the instructions given in the kit. You will need edible glue to hold the pieces together.

Make the glue using this recipe:

1 egg white
1 tablespoon lemon juice
1-2 cups confectioners sugar

Make sure the glue is thick – like glue should be. Put it into a piping gun or cake decorationg bag, and you are set to go.

Once the house is built, you get to start on the fun part. Let the kids pick out what types of candies they want to use to decorate the house, for example, gum drops, M&M’s, candy canes, or cookies.

Here are some more ideas:

• Put some trees in front of the house. How about using pretzel sticks with green candy leaves attached?

• Add food coloring into part of the glue to add color to your gingerbread house. Use the colored glue to outline the windows, roof, and other parts of the house.

• Make gingerbread cookies as people and set them in front or inside of the house. Decorate the gingerbread cookies to give them a more personal touch.

• Perhaps the kids would also want to add a chimney. Use licorice squares.

• Add a gingerbread Santa cookie on the roof.

• Want to add your family pet? Buy animal crackers and place them outside the house.

• Take a graham cracker and pipe on the family name, or the names of the kids who decorated it. That’s a great personal touch.

There are so many ways with which kids can decorate a gingerbread house because their imagination is never-ending. The main thing is to provide the tools and then have fun doing it. Whether it is a small, medium or large gingerbread house, the possibilities are endless. Not only will they have fun, but it will be a learning experience as well. Be sure to take lots of pictures!

Tempting Holiday Treats

by Rachel Paxton

The holidays are a great time for spending time with family. One favorite family activity of mine is baking! I just don't spend as much time playing around in the kitchen as I'd like, and the holidays are a perfect excuse to try out new mouth-watering candies, cookies, and other holiday treats. It's also a great time to teach your children how to find their way around the kitchen while also having fun with them at the same time.

I always find that holiday recipes often require expensive ingredients that I usually avoid in my everyday cooking and baking, just because of how much those unnecessary items cost. Around the holidays though, many of these items (chocolate chips, sweetened condensed milk, peanut butter, butter, etc.) go on sale and you can stock up on a few special ingredients that will let you whip up some favorite family treats rather inexpensively. I get a few at the store here and there for a few weeks (or even months) in advance while they're on sale to avoid having to buy them all at one time. Try out some of these recipes and get in the holiday spirit! Happy Holidays!

Gingerbread People Cookie Recipe

Gingerbread People
by Rachel Paxton

Directions and recipe for making gingerbread people.

Gingerbread cookies are a fun family activity during the holiday season. All you need to get started are some gingerbread people cookie cutters and your imagination.

You can make your own frosting. I like to buy different colored frosting in tubes that come with the different tips ready to attach and frost. It's a lot less work and mess, and you can use them over and over again.

Use a variety of candies to decorate, like raisins, gum drops, etc. As you can see from the picture, mine are nothing fancy, but still cute and fun to make.

Gingerbread Cookie Recipe:

1/2 c. sugar
1/2 c. shortening
1 egg
1/2 c. light molasses
2 1/4 c. flour
4 tsp. pumpkin pie spice
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. all spice

Cream sugar and shortening. Add egg and molasses; blend. Mix in dry ingredients. Chill dough for 1 hour. Roll out dough to 1/8 in. thickness. Cut into desired shapes. Bake at 350 degrees for 8 to 9 minutes.

Candy Cane Brittle

Candy cane lovers are going to love this delicious holiday treat! Watch for those candy cane sales.

Ingredients:

2 pounds white chocolate
30 peppermint candy canes
*(If it's not the holidays get a bag or two of the red and white swirly peppermint candies!)

Instructions:

First we're going to smash up those pretty candy canes! Put them in a large Ziploc bag and do whatever you want to do to smash them up, hit them with a meat mallet, smack them off the counter, drop them, whatever gets them broken into pieces. The kids will be sure to want to help with this step. Melt the chocolate. This can be done in the microwave. Start off with 1 - 2 minutes. Stir. Heat for another minute. Stir. Continue doing this until you have completely melted and smooth white chocolate. Stir broken candy pieces into the melted chocolate and spread the mixture evenly into a jellyroll pan. *Tip ~ line the jellyroll pan with foil first for easy removal and clean up. Chill until set, at least one hour but probably more. Break into pieces and store in a sealed container.
